The article discusses the impact of a balanced diet of a special ingredient on human health. The importance of food provision in the preparation of a rational menu for convicts, suspects and accused persons was noted. The energy value of food products necessary for the vital activity of the body of people serving sentences in places of deprivation of liberty is given. Special emphasis is placed on determining the food needs of various categories of convicts according to the nutritional standards established by Russian legislation. The analysis of minimum and increased nutrition standards is carried out, broken down into categories of special ingredient by food rations using the example of a typical territorial body of the Federal Penitentiary Service, and the factors influencing the food supply of those serving sentences in a correctional institution are highlighted. The number of people on food security is characterized, each nutritional standard is broken down by disease category, and their diet is based on nutritional standards. Special emphasis is placed on bringing nutrition standards, such as flour of various grades, cereals and pasta, poultry meat, meat, fish, cow's oil, vegetable oil, margarine products, vegetables, potatoes, spices, to various categories of persons serving sentences. Conclusions are drawn on the highest consumption of the analyzed list of products, depending on the category of drinkers. An assessment of the food supply of the analyzed typical correctional institution is given. Conclusions have been drawn on reducing the amount of food planning and consumption in accordance with nutrition standards, which is explained by a decrease in the number of special components.
