Abstract (English):
The article defines the list of works carried out by the culinary staff of canteens of educational organizations of the FPS of Russia. The number of employees of the canteen of the Academy of the FPS of Russia has been determined in accordance with the requirements of current legislation. In the course of the study, the number of production workers was calculated and a trend line was drawn based on the number of people who eat for hot, vegetable, meat and fish shops, as well as for washing and cleaning workers. As a result, calculated dependencies were identified for quantifying the cooking composition in educational institutions of the FPS of Russia separately for hot, vegetable, meat and fish shops, as well as for washing and cleaning workers. As an example, the need for production staff for the canteen of the Academy of the FPS of Russia was calculated in accordance with technical rationing and compared with the actual number of chefs in accordance with the requirements of current legislation.
