Abstract (English):
The article deals with the main aspects of the organization of food supply for convicts, suspects and accused serving sentences or in custody in various countries of the world. The cost indicators of prisoners' nutrition in foreign countries have been determined. The characteristic features and equipment of premises for receiving and cooking food for convicts in foreign countries are considered. The rules for drawing up diets and nutrition menus for various categories of sufferers are defined, including through the involvement of nutritionists, as well as requirements for the energy value of diets of prisoners in foreign countries, taking into account the balance of proteins, fats, carbohydrates, minerals, and other factors affecting the body. The process of purchasing and distributing food to meet the needs of prisoners in various states is considered. The tasks facing the employees of the rear divisions of the institutions of the penal system in the framework of catering are defined. The developed and applied diets of prisoners, formed in accordance with religious and philosophical considerations, are analyzed. At the same time, the practical orientation of the presented material consists in using the best practices of various states in terms of improving the food supply of prisoners and bringing them in accordance with international standards.
